How Morgan Beef sets, checks and corrects its standards across the feedlot, the abattoir and the deboning plant.
01Three principles
Three principles
One chain runs from feed crops and cattle to slaughter, deboning and delivery.
The same company owns each step, so a standard set at the feedlot can be checked at the abattoir.
Each site has a named operating head.
Each process has a written procedure, a record and a person who signs it.
When a check fails, the process stops, the cause is found and the correction is recorded.
Customers are told when a product they received is affected.
02Food safety
Food safety
The abattoir holds FSSC 22000 Version 6 certification.
The certified scope is: slaughtering and deboning of beef and sheep meat for consumers and retailers.
The food-safety system covers prerequisite programmes (cleaning, pest control, water, maintenance and staff hygiene), hazard analysis with critical control points, and the management review that keeps the system current.
Morgan Beef Abattoir is registered under the Meat Safety Act 40 of 2000.
The regulator of the abattoir is the Department of Agriculture, Land Reform and Rural Development (DALRRD).
03Classification
Classification
Every carcass is classified for age, fatness and conformation by trained classifiers before it is sold.
South African Meat Industry Company (SAMIC) site visits keep carcass classifiers current.
The class is printed in the roller mark on the carcass and recorded against the carcass number, so a customer can check the class of what was delivered against what was ordered.
04Internal audits
Internal audits
Internal audits follow a written schedule that covers every department of the abattoir and the feedlot within the year.
A finding opens a corrective action with an owner and a due date.
The action closes only when the auditor has seen the evidence that the cause is removed.
The results of internal audits, customer complaints and external audits are reviewed together by management, and the review decides where the next improvements are made.
05Suppliers
Suppliers
Cattle are accepted only with the identification, movement and treatment records that the abattoir requires.
Imported slaughter cattle: Standard operating procedure for importing cattle, sheep and goats for direct slaughter from Botswana, Lesotho, Namibia and Eswatini.
Packaging that touches meat, and every ingredient used in processing, comes from an approved supplier with a specification and a certificate of analysis on file.
Pest control, laboratories, transport and cold-storage providers are approved against the requirements of the food-safety system and reviewed each year.
