Morgan Beef sells beef offal from its own slaughter: tripe, liver, heart, kidney, tongue, tails, heads, heels, intestines and the smaller items, chilled or frozen, in bags, buckets and fixed-weight boxes.
01Overview
Offal
Offal is removed, inspected and washed on the slaughter line and chilled the same day. Red offal (liver, heart, kidney, lungs, spleen and tongue) and green offal (tripe and intestines) are handled on separate lines.
Each item is packed under its own label with the date of slaughter.
Customers who sell offal by the set can order the beef offal set, which combines the head, heels, tripe and red offal of one animal, or a mixed offal pack. Blanched tripe and tongue, and salted small tripe, are prepared on request.
Every carcass and its offal is inspected under the national meat inspection rules. Offal that fails inspection is condemned and does not enter the food chain.
