The deboning plant produces beef trimmings to visual-lean specification, meaty and clean bones, body and kidney fat and sinew for manufacturers, renderers and wholesale buyers.

Deboning (bones, fats and trimmings)
Trimmings to specification.
Trimmings are collected from the deboning tables as each primal is trimmed, graded by visual lean and chilled or frozen in crates or boxes. The specifications sold are listed below; other ratios can be agreed for regular volumes.
Bones and fat
Meaty bones carry the meat left on shin, shank and rib after deboning. Clean bones and marrow bones are supplied for stock, pet food and rendering. Body fat and kidney fat are supplied fresh or frozen in boxes.
Wagyu by-products
Wagyu trimmings, bones and marrow bones from the Wagyu programme are sold separately so that they are not mixed with the standard range.
